– 3 ripe bananas –
1 ½ cups all-purpose flour
– 1 teaspoon baking soda
– ½ teaspoon baking powder
– ¼ teaspoon salt
– ½ cup unsalted butter, softened
– ¾ cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– ½ cup sour cream
– 8 ounces cream cheese, softened
– ½ cup powdered sugar
– 1 cup heavy cream
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a medium bowl, mash 2 bananas with a fork until smooth.
3. In another bowl, whisk together flour, baking soda, baking powder, and salt.
4. In a large bowl, beat butter and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
5. Gradually add mashed bananas to the butter mixture, beating until combined.
6. Alternately add flour mixture and sour cream to the batter, beginning and ending with flour mixture. Mix until just combined.
7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
9. In a mixing bowl, beat cream cheese until smooth. Add powdered sugar and beat until well combined.
10. In another bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until smooth and creamy.
11. Slice the remaining banana into thin rounds.
12. Once the cake has cooled, slice it horizontally into two layers. Place one layer on a serving plate.
13. Spread half of the cream cheese mixture over the cake layer. Arrange banana slices evenly over the cream cheese layer.
14. Top with the second cake layer and spread the remaining cream cheese mixture over the top.
